Recipe : Badges of crackling
250 gr plain flour
250 gr semi-coarse flour
180 gr fat (pig)
120 gr greaves-cracklings (chopped or minced)
1/8 of milk
pinch of sugar
yeast (dry for 500gr flour or 20gr fresh yeast)
Thirds of lukewarm milk,pinch of sugar,1 tablespoons flour and yeast we prepare leaven,which leave in a warm place to rise.
Sieve the flour into a bowl, add solid lard, salt, leavened yeast, eggs, milk and process the dough.
Finelly, stir in finely chopped or minced pork cracklings(greaves). The dough in bowl cover with clean cloth and leave in a warm place for a least an hour thoroughly rise.
The dough we will create big round patties-balls, which in larger intervals place on a baking try, lined with baking paper. Once the sheet is full, squeeze every ball from the top round grill to prepare czech potato salad,making the balls not only decorate, but from them we create patties. Brush them with beaten egg, sprinkle with salt, some seeds or cumin and put in a prehated oven about 160-170 C, once turn golden. Remove from oven, let cool and serve !
